This is a super easy way to incorporate beetroot into a dessert. Beetroots are full of anti-oxidants and have an intense, sweet flavour.
Always try to source your vegetables locally and from an organic supplier, they will be incredibly fresh and taste all the better for it!
3 egg yolks
40ml maple syrup
65ml beetroot juice
65ml almond milk
120ml coconut cream
190g 70% organic dark chocolate
Put the egg yolks and sugar in to a bowl and beat until pale and creamy.
Heat the almond milk and coconut cream until simmering.
Stir a third of the hot milk/cream mixture quickly in to the egg and sugar and mix well to combine.
Return the mixture to the remaining hot milk.
Cook over low heat, stirring continuously until thickened and coats back of the spoon. (Do not allow to boil).
Remove from the heat immediately and strain over the chocolate, stirring carefully until smooth.
Set in a glass and allow to cool
Once cooled put in the fridge until ready to serve.
